You know them by sight, but rarely by name: Dough scrapers are the small, anonymous kitchen aids that help to ensure that the cake batter is well mixed in the oven and the ice cream cake is evenly smoothed in the fridge.
Dough scrapers are often confused with baking pans or dough spatulas because they can also be used for smoothing or scraping out dough. However, as flexible as they are, dough scrapers can also be used for other tasks, such as mixing bowls or sour cream tubs.
In the following, we explain what these tasks are and what you should look out for when choosing a dough scraper for the kitchen.
High-quality material, can be used on both sides: Quality features of dough scrapers
Modern dough scrapers are based on the classic design of baking spoons: The actual scraper is attached to a wooden, stainless steel or plastic handle and is ideally made of temperature-resistant silicone. The functional part, i.e. the area with which you work on the dough, is usually rectangular, but has a rounded edge that makes it easier to remove dough residue from the sides and bottom of the bowl.
However, the dough scraper is not just for getting the last bit of dough out of the baking bowl. It is also great for spreading creams or whipped cream evenly, spreading waffle or pancake batter or smoothing out chocolate pudding after it has been poured into the dessert bowl. Even the delicious sour cream or home-made strawberry jam will not go to waste if the leftovers are removed from the jar or cup with a small spatula.
Dough scrapers are therefore available in different sizes so that they can be selected to suit the task at hand. The same applies to all dough scrapers: they must be flexible to use. The functional part needs to be smooth and firm for mixing and spreading, but soft and pliable for scraping out the curves at the bottom of the bowl or in the glass. High-quality dough scrapers meet this requirement as their sides have different degrees of hardness.
To ensure that the dough scraper sits comfortably in the hand and is suitable for working with food, the handle should be made of a high-quality and hygienic material. Stainless steel is a good choice here, as 18/10 stainless steel is absolutely tasteless and odorless, corrosion-resistant and durable.
Sizes, colors, temperature resistance: Distinguishing features of dough scrapers
The functional parts of dough scrapers come in different sizes and the handles or stems have different lengths so that they can optimally fulfill all their intended tasks. It is therefore advisable to purchase dough scrapers in different lengths and sizes. However, if you only want to use the dough scraper for mixing and spreading and not for emptying small containers, opt for a dough scraper with a larger functional part. The handle should be a maximum of 27 cm long for easy handling, even for fine work.
There are major differences between the dough scrapers available on the market in terms of their temperature resistance. Some plastic dough scrapers are temperature-resistant up to a maximum of 120 °C, whereas silicone can withstand temperatures of up to 220 °C.
So if you really want to use the dough scraper in a variety of ways, you should always choose a silicone model that you can also use in the pan or on a hot cake. Also make sure that the dough scraper can be cleaned in the dishwasher - this is not the case with dough scrapers with a wooden handle.
Dough scrapers with an eyelet or a wider recess at the end of the handle allow for space-saving storage. Of course, hanging storage is at its best when the dough scraper also impresses in terms of design. Dough scrapers are therefore available in many attractive colors and shapes.
However, functionality should be paramount, which is why we recommend buying a dough scraper that is rather plain in shape, but does not have to hide next to the other attractive kitchen gadgets thanks to the high-quality combination of stainless steel and silicone.
Dough scrapers in bright colors are preferred for country-style kitchens, while black silicone is a must for minimalists and lovers of an industrial style. Those who like to set fresh accents in the kitchen with strong colors will be delighted with a pink dough scraper.

Dough spatulas differ from dough scrapers in that they do not have a handle and are made of stainless steel.
