Presses and masher are important kitchen helpers when the puree in your kitchen does not come from a bag and the juice is still freshly squeezed from the lemon. As functional kitchen accessories, squeezers and mashers help to make food tastier, more nutritious and easier to prepare.

In order for the lemon squeezer, garlic press and potato masher to prove their worth in the kitchen over many years, the materials and workmanship must be of the highest quality. Potato mashers and meat flatteners also contribute greatly to the taste, which is why these kitchen gadgets should also be of the highest quality. Here we explain the differences between the presses and mashers and which details are important.

 

Juicing, pureeing or finely crushing: presses for versatile cooking

Presses are used in the kitchen as juicers or as a pureeing aid. With a citrus juicer, for example, the juice of lemons, limes or oranges can be extracted by simply attaching and turning. The citrus juicer consists of a collecting container and a round attachment. The attachment includes the drainage holes and the pressing cone in the middle, onto which the citrus fruit is placed. For easy and drip-free pouring into a glass or juice carafe, the citrus juicer is ideally equipped with a round top.

A potato ricer, on the other hand, can be used to make a fine potato dough from boiled potatoes, which can then be processed into mashed potatoes, baby mash or croquettes. The potato ricer consists of a container in which the potatoes are placed, a sieve through which they are pressed and a handle. The sieve should have as narrow a perforation as possible so that really fine puree comes out at the end. If you prefer coarser mashed potatoes, we recommend using a potato masher instead (see next section).

Between the juicer and the masher is the garlic press, which is used to finely crush the cloves so that the juice and optionally also fine pieces can be used. The garlic press consists of a two-part fold-out handle with a small sieve or press at each end, which is pressed onto the inserted garlic. A scraper makes it easier to drop the pressed garlic directly into the bowl provided.

If ginger and garlic go together in terms of taste, make sure you choose a garlic press that can also be used to press ginger. The garlic press should be easy to clean. If it is made of stainless steel, it must be a high-quality material (18/10) so that the garlic press does not rust.

 

Fine or coarse, tender or roughened: mashers and flatteners

Mashed potatoes or mashed potatoes - this is a hotly debated topic among lovers of this delicious potato dish. For some, mashed potatoes can't be fine enough, while others prefer them to be coarsely mashed.

With a potato masher, you always have the freedom to choose how you want the result. The masher consists of an elongated handle that merges into the perforated functional part at the lower end. The handle should be wide and sturdy or have two arms so that you only need a little force for tamping. The functional part should be flat so that you do not slip when mashing.

In most households, a potato masher is not only used for mashing potatoes, but also for mashing baby mash and vegetables or for making a particularly creamy vegetable soup. When preserving, the masher can be used to mash fruit for jam.

To ensure that the potato masher is versatile, it should be made from a food-safe and sturdy material. Stainless steel is also an ideal basis here and has the further advantage that you can also use the potato masher to mash hot food.

Potatoes and especially mashed potatoes or mashed potatoes can be combined very well with meat and vegetable side dishes. The meat works best if it is “pounded” (plated) or roughened before roasting. Tougher meat is usually pounded with a meat mallet, which has a flat and a knobbed surface. The flat side is used to flatten the meat, while the knobbed side is used to roughen it so that it comes out of the pan or oven tender.

The meat flattener is an alternative that can also be used to process fish as well as meat. In this case, it is important that the flattener has a high dead weight, as the food is not so much “beaten” and is instead brought to a uniform thickness by applying gentle pressure.
