Steam cookers: important functions and features for the purchase decision
Chinese dim sum with vegetables or meat, Japanese gyōza, Korean mandu: if your mouth is watering at the thought of the numerous delicacies from Asian cuisine, it makes sense to buy a steamer. This is because the dumplings are not boiled, but cooked over hot steam.
Once you have acquired a taste for it, you will soon realize that it is not just dumplings and vegetables that are best cooked gently in a steamer. Meat can also be cooked in it until tender and aromatic.
The basic principle of steaming is easy to explain: the pot filled with a small amount of water is placed on a hob. The ingredients are not placed in the water, but in a steamer insert and the pot is closed with a lid. As soon as the water is heated, the hot steam rises and ensures that the food is cooked evenly.
The advantages: Vitamins and nutrients are largely retained instead of being released into the cooking water, frying fats or oils are unnecessary for preparation. And because the ingredients are not in the water, you also need less salt. If you want to keep the food warm in the steamer, it won't stick together and won't swell up as much as it does when you cook pasta or rice in hot water.
According to this principle, a steamer consists of three elements: the pot into which the water is poured, a sieve that allows the steam to pass through to the food inside and a lid. High-quality steam cookers are even more conveniently equipped and can be used to prepare, keep warm and heat all types of food: Vegetables and fish, meat and pasta, jacket potatoes and boiled potatoes or even a baby porridge. Ideally, they are also PFOA/PFOS-free and have a scratch-resistant non-stick coating.
Roaster: features for versatile use
The fact that the Sunday roast or roast fish is best prepared in a roasting pan is clear from the name of this useful piece of cookware. But did you know that lasagne, a gratin or a casserole also feel right at home in it and turn out particularly tasty?
Compared to the roasting pan, the roasting pan can also hold much larger quantities - the Christmas roast, one or two broilers, the leg of lamb can be seared in it together with tasty vegetables and gravy and then placed in the oven. Desserts or home-baked bread can also be prepared in the roasting pan.
Roasting pans are available in oval or rectangular shapes. As they can weigh a lot when full, they should have sturdy handles. Stainless steel is an excellent material for making roasters, as it is odorless and tasteless even after hours of braising and stewing in the oven. High-quality stainless steel roasters with non-stick coating also prevent food from sticking. They keep food warm for a long time and are easy to clean after the feast.
Which other features a roasting pan should have depends largely on how the pan is mainly used. A temperature-resistant lid is always necessary if you also want to prepare stews in it. An internal scale makes it easier to add the right amount of water or stock.
If you are planning to switch from a gas hob to an induction hob in the near future, it is best to choose a roasting pan that is suitable for all types of hob, as high-quality roasting pans have a long service life. You should also consider the filling quantity when making your choice. Bear in mind that the roasting pan cannot be filled to the brim. Six to eight liters is therefore a good unit of measurement so that you can prepare food for the whole family or for a meal with friends in the roaster.
