To satisfy both small and large appetites, we recommend buying a pan set with pans in at least two different sizes. In the following, we explain what to look out for when choosing a pan set and the right accessories for the basic equipment.
High-quality pan sets: what is included and how do you choose them?
Basic equipment or a complete overhaul: a high-quality pan set brings more variety to the kitchen! Basic pan sets usually include two or three frying pans in different sizes. This means that the pans can be easily arranged on the hob even when used at the same time. And there is a pan in the right size for every dish - from stir-fries and fish to fried eggs or gratinated sandwiches.
The material of a frying pan must have excellent heat conductivity so that the heat can be distributed quickly and evenly across the base. Therefore, frying pans are preferably made of steel, aluminum and stainless steel. If an aluminum core is integrated into the base of the stainless steel pan, the pan is also suitable for use on induction hobs.
Frying pans that are offered as a set are also usually coated with a non-stick or ceramic coating. These prevent short or long-frying food from sticking to the base. A robust non-stick coating should be temperature-resistant up to at least 200 °C. Ceramic coatings can also withstand higher temperatures, but this is rarely required for frying and baking in the home.
Finally, the shape of the frying pans also determines what they are ideal for. Pans with low sides offer particularly good access to steaks, schnitzel, falafel or oatmeal. They are therefore ideal for quick and hot searing. Pans with higher sides allow you to fry plenty of vegetables or deglaze the food with liquid, which can then be used to create a delicious sauce.
The classic frying pan, which is included in most pan sets, does not have handles but an elongated pan handle. A robust material, temperature resistance and an ergonomic shape are the main requirements that the handle must meet so that the frying pan can be lifted easily, held firmly when stirring and swiveled if necessary.
Lids and other accessories are not usually included with frying pan sets. Therefore, make sure that you order these as an option or buy them later.
Pan accessories: requirements and selection criteria
Which accessories are a useful addition to the pan set depends on many factors. However, one or more spatulas should always be included, as it is difficult to turn and remove food without a spatula.
The spatula must be made of a robust and temperature-resistant material and fit comfortably in the hand. This is why spatulas are often made of food-safe and heat-resistant stainless steel. To protect the base of the pan, the spatulas can be edged with silicone or the functional part (spoon) can be made entirely of a temperature-resistant nylon material. If the spoon is perforated, fat that has been absorbed with the food quickly drips off.
The spatula is a good addition to the spatula, especially if you are frying large portions of fried potatoes or pancakes in the pan. If you like to prepare sauces and vegetables in the pan, it makes sense to add a spatula and wok spoon to the pan set.
You can also get pan and wok spoons as stainless steel cooking spoons with or without a silicone rim. To ensure that you always have your spatulas, ladles and cooking spoons to hand, we recommend choosing attractively designed models with a hook or hanging loop so that you can store them hanging up.
As pan lids are not usually included with pan sets, order the lids in the right sizes as an option if you also want to braise or cook sauces in your pan. A glass lid that fits snugly around the edge of the pan is particularly suitable for braising, as you can always see when liquid needs to be added. A hollow lid with a height of 9 cm or more also enlarges the cooking space of the pan so that dishes can also be cooked in steam.
No lid is used for searing, but a splash guard should be at hand. This is particularly recommended if you are heating frozen food in the pan, so that if the oil reacts with frozen water residue, it stays in the pan and does not splash onto the hob.

If it is our ProResist non-stick coating, you can easily work in the pan with stainless steel spatulas without an additional coating, as the incorporation of silicon carbide particles gives the coating extreme resistance. If you opt for pans or pan sets with the ProPlex non-stick coating or with a ceramic coating, as are optionally available in the ELEGANCE series, we recommend using spatulas, ladles and wooden spoons that are coated with silicone.
