In a serving pan, you can not only conjure up a sensationally seared steak as a side dish with potatoes and vegetables. It also harmonizes well with vegetables and other ingredients that are stirred into a dish in the serving pan. After all, why should a main course always consist of three separately cooked side dishes when your guests will enjoy a hot and aromatic pan of spaetzle or an Asian rice pan just as much?
Serving pans have the advantage that they also bring a good mood to the dining table with the delicacies prepared in them. They differ from the classic frying pan in a few important details. In the following, we explain what these are and what you should look out for when buying a serving pan.
Low enough for frying, high enough for serving: Advantages of serving pans
The serving pan is similar in shape to the casserole or roasting pan. As a frying pan, it is made from a material that allows heat to be distributed evenly. What distinguishes the serving pan from the frying pan and the roasting pan is the typical height of its walls. This is higher than that of a frying pan, which also increases the possible filling quantity, but lower than that of a saucepan, so that it is still easy to work with a spatula.
Serving pans are also mainly available with a diameter of 24 to 28 cm and with two handles on both sides instead of a pan handle. This means that the pan can be carried safely to the table despite its large capacity, but takes up less space than a pan with a handle.
Like the frying pan, most serving pans have a non-stick coating on the base. With the exception of wrought iron pans, of course, which are suitable for use on the stove or over an open fire or on the grill. In this case, the protective bottom layer is created as a patina through the use of the pan. If the dishes are to be served directly in the pan, it is also advisable to choose a model with a higher rim for a wrought iron frying pan.
Serving pans are real eye-catchers on the dining table and are usually received and eaten with great enthusiasm. As frying pans, they are therefore often used to prepare dishes for the whole family or a shared flat.
But they also serve well for small groups or single households. This is because most pan-fried dishes are perfect for eating on two consecutive days. They can then simply be reheated in the pan the following day. This saves time and money - and with the right ingredients, the pan-fried dishes often taste even better on the second day. If you want to make use of this advantage of the serving pan, ideally choose a model with a lid in which the food is well protected.
Quality features of the material and coating of high-quality serving pans
While the serving pan is clearly different in shape from the frying pan, its material and finish should meet the same quality standards as high-quality pans.
Wrought iron serving pans, aluminum serving pans and stainless steel serving pans have excellent heat conductivity. However, the latter should have an aluminum sandwich base so that they can be used on all types of stoves and the positive property of stainless steel to retain heat well is complemented by the excellent conductivity of aluminum.
Wrought iron serving pans are usually used to sear classic dishes, such as those served at barbecues, or to serve roast potatoes hot and crispy. A classic hook style and rippled base also give the rustic pan a rustic, campfire or farmer feel. After use, the wrought iron serving pan should be cleaned by hand and then stored in a dry place.
As the wrought-iron pan is more responsible for spot and rapid heating, aluminum or stainless steel pans with a non-stick coating are more often used for typical pan dishes that are prepared on the stove. The advantage of aluminum is that it heats up evenly. And because it is wonderfully light, even a well-filled serving pan is easy to lift and carry.
Stainless steel is one of the materials that makes the modern kitchen shine and allows pots and frying pans to be used in a variety of ways. Stainless steel serving pans also make a stylish statement on the dining table. A sandwich base made of aluminum ensures that the pan dish is heated evenly and cooked thoroughly. And because stainless steel also retains heat particularly well, food stays warm for longer in a stainless steel serving pan.
If you opt for a serving pan with a non-stick coating, it must also have excellent properties, as the coating on the base of the pan should prevent food from sticking and it should also be possible to work in the pan with spatulas and wooden spoons without scratching the base.
