Experienced cooks, on the other hand, know this: Pans don't just differ in size. Which food is best prepared in a pan depends on many factors. For example, whether it is a coated or uncoated pan. Or whether the sides of the pan are high or low. And, of course, how temperature-resistant the pan, handle and coating are.
When choosing a pan set, you should therefore consider the quality and features on the one hand. But your personal preferences are also important. So start with the simplest questions: Do fried potatoes necessarily include a schnitzel or a fried egg? If so, you will need at least two pans of different sizes, as fried potatoes need enough space to ensure that they get really crispy instead of sticking together. A fried egg, on the other hand, is a frugal food, which is why it would make no sense to fry a single fried egg in a pan that is far too large, if only for cost reasons.
But it's not just the size of the pan that needs to suit your cooking habits. The coating also plays an important role. For frying, steaming or cooking at moderate temperatures, a stainless steel pan with a non-stick coating is ideal, as it also prevents the food from sticking. For frying at particularly high temperatures, uncoated pans or frying pans with a ceramic coating are a good choice.
Do you like to prepare food in the oven or do you often need more pots and pans for cooking and frying than will fit on the hob? Then you should also make sure that the pans are ovenproof when buying a pan set. It is not just the body of the pan that is important here, the handles and lids, if present, should also prove to be temperature-resistant in the oven.
Another important selection criterion when it comes to pan sets is the stove on which you cook and fry. The frying pans must fit on the hob like a lid on a pot - otherwise energy will be wasted unnecessarily and the results will be rather modest.

Universal pans are primarily suitable for basic equipment. These are flat frying pans that are made from a robust and food-safe material and have a non-stick coating. Excellent materials for the manufacture of such frying pans are stainless steel and aluminum. Ideally, stainless steel pans also have a sandwich base with an aluminum core so that they also perform optimally on induction hobs.
With a 2 or 3-piece pan set of high quality, you are already well equipped. Special pans such as an uncoated iron pan or a wok pan can then be added gradually. Alternatively, you can of course always put together your own set to suit your individual cooking habits. For example, a combination of frying pan(s), serving pan(s), braising pan(s) and wok pan(s), which have different functions but bring a uniform look to the kitchen thanks to their design.
