Preparation

1. Cut the butter into pieces and mix well with the remaining ingredients for the dough. Then wrap the dough in foil and refrigerate for 30 minutes.
2. Peel the zucchini and use a vegetable peeler to slice it lengthways. Cut the tomatoes into long slices as well. Finely chop the onion and coarsely chop the herbs and mix everything with the beaten eggs, goat's cheese, salt and pepper.
3. Roll out the dough on a floured work surface and place it in a greased tart pan. Prick several times with a fork and pre-bake in the oven at 180 degrees for about 10-15 minutes. As soon as the tart base is lightly browned, take it out of the oven and fill it with the cheese mixture.
4. Roll up a slice of tomato and a slice of zucchini alternately to form a snail and place it in the middle of the tart. Continue to alternate zucchini and tomato slices in a circle until you reach the edge. Then put the tart back in the oven for another 30 minutes.
